Oven-Baked Summer Squash Fries (Should Be in Your Winter Recipes)
Not sure what the weather is like where you are. In my city (Austin, TX USA), it's confusingly balmy and breezy, occasionally rainy, comfortably warm with no need for a sweater, and sometimes chilly. It's climatically perfect! ☺
My friends elsewhere around the USA and the world are still complaining that Old Man Winter has overstayed his welcome and refuses to leave! This recipe is fabulous no matter what the season of the year is or what kind of weather you're experiencing. Enjoy!
Ingredients:
1 medium summer squash
2 eggs
1 ½ cups breadcrumbs (try panko breadcrumbs for a crunchier texture)
1 teaspoon paprika
1 teaspoon mustard powder
Salt and pepper
Olive oil
How to Make It:
Preheat oven to 400 F. Grease a large baking sheet with olive oil and set aside.
Cut your summer squash into wedges. Remove the seeds if they are quite large and set wedges aside.
Whisk the eggs in a dish and set aside.
In another dish, combine the breadcrumbs, paprika, mustard powder and salt and pepper.
Start by dipping the wedges, one by one, into the egg mixture and then the breadcrumb mixture. Place each wedge on the greased baking sheet. Continue until all the wedges are done.
You can bake the wedges as is for about 30-40 (until soft inside and golden brown on the outside) as is, but if you want a more golden texture, drizzle or spray some olive oil on top of the wedges. Flip halfway through baking.
Serve with ranch or another favorite dip.

Mushroom: Real Food of Fantasy and Fairy Tales
For me, it provokes a memory of a romantic dinner date. My first experience tasting a mushroom was when my late husband (my fiancé at the time) prepared dinner for me. Steak with mushroom gravy.
Before meeting my husband, I avoided mushrooms for two reasons.
~Number 1: My mother never used them in any of her recipes. Mom didn’t cook them. (???) Maybe they don’t taste good. (O.o)
~Number 2: The way people describe mushrooms. Fungus. Toadstool. They don’t make the mushroom sound appetizing or visually appealing.
However, many cooks and chefs use the mushroom as the main ingredient in their recipes. Foodies are happy to share photos of amazing dishes where mushrooms are the star of the show.
As for being visually appealing, mushrooms are quite beautiful.
Artists often use them to illustrate fantasies.
Nature photographers go insane! They capture incredible pics just roaming through the woods or the fields.
My first time eating mushrooms was over 40 years. But from that day forward, I didn’t need convincing to make mushrooms a part of my diet. However, in case you do, perhaps this health article by Popular Science will persuade you. “4 reasons you should eat more mushrooms”.
It's good to know these reasons why, but the most important thing everybody needs to know about mushrooms is that some of them are NOT edible. No doubt you will find these information links useful.

Za’atar is a spice mix or a spice blend used in Arab and Israeli cuisines. It is used in recipes the same way Westerners use salt.
Sure many recipes are tradition! But if you won’t eat a dish because of that one vegetable that you just don’t like, then go ahead and substitute the veggie for the one you do like! It’s OK. That’s not illegal!

There are many celebrities in the entertainment business who tout their vegan diet and try to influence others to make that change. I consider politicians a “type of celebrity” and they can also be influencers. However, Senator Cory Booker insists that he would never use his official public position to try to convert anyone else. Nevertheless, kudos to Cory Booker, an African-American Senator who is currently running for President in the 2020 Election. He is an outstanding role model, a shining example and proof positive that becoming a vegan is definitely doable. I mean … African-Americans are not known for preparing vegan-oriented meals. For him to make that kind of dietary change, it could not have been easy. Go bro!
Fast Food Restaurants in USA Should Have More Vegan Dishes
As I said, I have not fully changed over to a vegan or plant-based diet but it’s not for lack of recipes. Many of my online vegan friends share their recipes for breakfast, lunch, dinner, desserts, and snacks that you can make for yourself at home. But what about eating out? Like most Americans, I often eat at fast-food restaurants. I am of the opinion that it certainly wouldn’t hurt for America’s fast-food restaurants to add some vegan dishes to their menu. I know that it can be done because Wendy’s restaurants in India have paneer on their menu. They don’t have that in the USA. But they could and they should. If they did I would order it when I’m going through the drive-through! LOL.
Buddha Bowls Make Switching to Vegan Easy
My significant other is a YouTube junkie and he loves watching the cooking videos. Since we share the same bedroom I usually end up watching those videos with him. There is a wonderful YT channel called Tish Wonders and in one of her instructional videos, she prepares 3 mouthwatering Buddha Bowls. Her last recipe is my favorite. I personally believe that for someone to make the transition to a vegan diet, starting out by eating Buddha bowls for lunch or dinner is the best way! It’s an opinion, of course. But a very reasonable opinion. Don’t you agree?
Final Tip About Becoming Vegan
Changing over to a vegan diet is a good thing. But some people might make unhealthy decisions. Carrie Forrest, MPH in Nutrition, published a very informative article about 8 vegan diet dangers and she cautions that one of them is irreversible. Before making any major diet and nutrition changes, you may want to seek professional medical advice.
